
As most of you know, I have teamed up with Roots and Shoots Farm for this season’s CSA (Community Supported Agriculture). Throughout the season, I will post updates about what we receive, recipe suggestions, and tips and tricks to get the most out of your CSA. To find a CSA in your area, simply search the Internet for “CSA” + your city.
Unlike previous weeks, we are now getting a nice mix of sun, heat and rain. That is a great recipe for growing veggies.
According to the latest newsletter, we will be getting loads of tomatoes and extra zucchini. I am really happy about this because I am going to freeze a bunch of grated zucchini for future use. My family loves zucchini soup and I will use my frozen stash in the winter when we are craving a taste of summer.
The beauty of using zucchini in soups and bread or muffins is that there is no need to blanche the zucchini before freezing. Just grate it up and freeze.
